    Extra Dry Vermouth or chicken stock/ broth.
    Are you trying to avoid using alcohol?

    This? White Wine Poached Cod

    If it is this recipe (which calls for 2 -3 C white wine) , there really is not a good substitute. The wine does impart some flavor.

    If you are adding a small amount of wine, a substitute may work. It really depends on the amount called for.

    I found the recipe from allrecipes.com. The title of the recipe is "Fish Fillets Italiano". It called for 1/2 cup of dry white wine. I am temporarily out of wine and wanted to make it tonight. That's why I ask.

    If you have other alcohols at your disposal, a bit of vodka (NOT a half cup) would work without adding any flavor. Alcohol carries flavors tin a dish that are not soluble in water or fat. Wine would give a better result, but you could just omit it and it would still taste pretty good.

    Most recipes call for chicken stock as a substitute...In some rare cases I have also seen apple juice as a substitute but I guess it depends what else is in the recipe...hope that helps...

    For some things I have used chicken broth which turns out fine, I am just wondering though with fish if it might become a bit to salty.. I guess it is worth a try. I had never thought of the beer idea but that might make for a unique flavored fish.

    I don't salt my homemade stock for exactly that reason. If I want to make soup out of it, I add salt at that time.
