What do you feel are the top five cookbooks to own for authentically Mexican (not Tex-Mex) recipes?

You haven't had a reply yet, so I'll venture in. I guess you'd have to pick Rick Bayless' cookbooks. I have a book called
"Mexican Family Cooking"
by Aida Gabilondo
that I like. Most of my other cookbooks are Tex-Mex.

I thought I was the only one who had that cookbook!
It's kind of eye-opening as to the sort of thing Mexican families really eat.

Salad and potatoes!
What I meant was that there's a lot more to Mexican family cooking than tacos and burritos and everything spicy.

Anything by Diana Kennedy, especially The Art of Mexican Cooking (my copy fell apart, I need to replace it). Rick Bayless is a close second for me, because his recipes are accessible for most people, but Kennedy is the True Empress. She's in her 80s and is still living, cooking, and writing in Michoacan. I also just got Truly Mexican by Roberto Santibanez, twenty pages on just guacamoles! I haven't started using it yet, though.
I agree with Chocolatl on the taco/nacho/burrito stuff. Most "Mexican" restaurants in the U.S. have nothing to do with Mexican food. There's a restaurant calling itself Mexican on every block where I live, yet they all have the same menu. Only one in the area serves moles, and the owner is from South America!
