    Summer has ended in Eastern Europe, but there are still plenty of lovely vegetables at the market. As Eastern Europe is highly agricultural, I thought it would be fun to look at some wonderful vegetable dishes from our region. I've organized them by the predominant vegetable.

    I just bought some fresh beets at the market, now to decide what to do with them???? The problem is, there are also soups to consider!
