    Grilled Bacon Wrapped Stuffed BBQ Cheesy Chicken w/Broccoli

    This was a NO recipe night. I really used up stuff I had on hand.

    My neighbor gave me a chicken breast he didn't want to re-freeze, and couldn't use ... so,

    Flattened, seasoned both sides with s/p, brushed with a mix of BBQ and Dijon, topped with 2 cheddars (grated mild and sharp). Rolled up and wrapped with bacon. Secured with a skewer and grilled; I added foil pouch of hickory chips to the grill.

    The best tomato slices from a friends nursery. Nothing other than s/p. And broccoli. YES, frozen, I wanted to use the bag up. Added mushrooms, a shallot, my own Italian seasoning, and garlic butter. Actually pretty good for frozen, cooked in a foil pouch on the grill.

    On the grill it goes ... One Big A** Chicken Breast. I ate half

    Now that is a double droolicious dinner!! The bacon, cheddar, BBQ and mustard make look and sound like a very very tasty breadless grilled sammie. Now please excuse me while I go whip my chin.

    Those photos of the grilled breast are wonderfully scrumptious!!! Love the last one with the cheese oozing out! Just my kind of thing -- I would have eaten every last bit!! icon_lol.gif

    somethings in the World are just not fair... cooking on the grill nearly all year and neighbours who wander round with chicken breasts to give away, ...lol...

    looks great, just gets better and better looking along the line....

    Thx guys, they were good. Normally, I go to a local butcher and have them cut fresh bacon for me if I am making them for guests. The store bacon tends to be too thin sometimes and tears; and using bacon from the butcher really makes the chicken breasts look pretty. Perfect bacon stripes. But just me last night, besides tastes the same.

    Next time I think I might add some scallions to the center, which would give it a pretty color and a little onion flavor.
