    Project Parsley

    Parsley is one of my favorite herbs when fresh. For many reasons, it's good cooked, or fresh, as a garnish or as the main event. More importantly parsley is widely available. Pretty inexpensive and always in stock.
    Today I made the classic Greek Maidanosalata (Greek Parsley Spread).
    In order to make the best dish one must start with the freshest ingredients.

    A quick run in my food processor and presto!


    Served with pita chips (which is just pita bread cut into wedges and toasted in my cast iron skillet). It's a delicious and nutritious evening snack.

    How do you like your parsley?

    Hmm, that looks really good! I love the green color. Does it taste similar to pesto?
