    Pancho's Puffy Chili Rellenos

    Does anyone have any idea on how to make these? They are puffy & in an eggy thick batter. They don't appear to be fried. The inside has the standard green chili & cheese. I would appreciate any help or links. Thank you! icon_biggrin.gif

    When I make them I beat the yolks and white separately, then fold the beaten whites into the batter. The filled and coated chiles are then fried in oil, which makes them puff beautifully. The batter would most likely slide off if they were baked, unless they were in their own little baking dishes to hold it together, more like a chile relleno casserole.
