I got a bunch of long mild chiles from my veggie basket this week. No need for salsa... too much canned in pantry so not sure what else to use it for. Hmm... maybe chili?
Anyway. These would be perfect for chiles rellenos. We are't veggie or vegan but we have lactose intolerance to deal with. I thought that maybe the vegans could help me out with an alternative way to stuff them? We can have eggs and alternative "cheese" including that with casein. I don't happen to have any of that on hand but the chiles might last until payday when I can get more ingredients.
I already did a recipe search under "chiles rellenos" and vegan but there was nothing posted.

As a vegetarian, sometimes it is hard to sift by the "vegan" or "vegetarian" buttons. Often, people who post recipes are not vegetarian themselves so they don't even think to label it as such even if the recipe qualifies. Instead, I'll sort by the "no meat" "no seafood" option under the main ingredient section. You might want to try re-doing your search this way by selecting "no dairy." some recipes may still come up that have dairy if the author did not select dairy as a main ingredient but it is still a way of searching that significantly narrows down the options!

Hey there,
I have to admit, that Im not quite sure what exactly chiles rellenos are, but as far as stuffed peppers go, these sound great. Maybe they can give you some ideas. Im sure the fillings would work nicely with chiles, too.

Hello there!
I'm not vegan although I cook many vegan meals.
I have a posted chili relleno recipe that uses leftover
mashed potatoes (can sub yams, sweet potatoes, etc.).
Skip the cheese:

You can also stuff them with roasted veggies. I've had that
in restaurants.
