This week I am going Bananas; ....come with me!
Because of their impressive potassium content, bananas are highly recommended by doctors for patients whose potassium is low. One large banana, about 9 inches in length, packs 602 mg of potassium and only carries 140 calories. That same large banana even has 2 grams of protein and 4 grams of fiber. No wonder the banana was considered an important food to boost the health of malnourished children! Those reducing sodium in their diets can't go wrong with a banana with its mere 2 mgs of sodium. For the carbohydrate counters there are 36 grams of carbs in a large banana.
There are many varieties of bananas throughout the Caribbean. Due to the high nutritional value and creamy taste, bananas are the preferred food for babies and young children. Bananas are sweet, very nutritious and easily digested. Ripe bananas should be peeled and eaten immediately because oxidation quickly turns them black.
I wanted to try this fantastic dessert quite different from my Bananas Flamblé I used to make.

Bananas Caribbean I made when my son came to visit; it is really good.
Bananas Caribbean from Muffin Goddess
4 medium bananas
1/4 cup packed brown sugar
1/2 cup fresh-squeezed orange juice
1/4 teaspoon nutmeg, freshly grated
1/2 teaspoon cinnamon
1/2 cup sherry wine
1 tablespoon butter
2 tablespoons light rum (coconut rum would probably be good here, too)
Directions
Preheat oven to 450 degrees F.
Peel the bananas, split them in half lengthwise, then place them in a buttered baking dish (10"x6"x2").
Combine the sugar, orange juice, nutmeg, cinnamon and sherry in a saucepan. Heat until sugar is dissolved, then pour over the bananas. Dot with butter.
Bake bananas for 10 to 15 minutes, or until the bananas are tender. Baste them once or twice during baking.
Remove from oven. Sprinkle with the rum before serving.
Serve as-is, or with a scoop of vanilla or coconut ice cream.
