    Menu for Week of July 21 thru July 27, 2012

    Hi menu pals!!!!
    Summer is in full swing, with temps over 100 nearly every day. The cool nights are gone icon_cry.gif
    Really gotta keep that in mind when planning my menus!
    The Zaar World Tour is starting tomorrow and we're visiting France, Spain and Portugal first. So you'll see lots of these cuisines on my menu.

    Here's my menu. Share yours!!

    Saturday - Sweet and Sour Relish (For Hot Dogs, Brats, Etc.) with gourmet hotdogs, Grilled Corn With Smoked Paprika Butter

    Sunday - Barbecued Olive and Pesto Burgers with grilled vegies

    Monday - Arroz Con Pollo a La Tica, Portuguese Corn Bread for the Bread Machine (Broa)

    Tuesday - Fettuccine With Blue Cheese, Rosemary French Bread, salad

    Wednesday - To Die for Crock Pot Roast, Crock Pot Potatoes Boulangere

    Thursday - De-Constructed Chicken Cordon Bleu, Roasted Fingerling Potatoes & Green Beans in Tarragon Sauce, vegies

    Friday - going to ball park to watch baseball!

    You are done early! I'm impressed. Actually, I usually finish mine Friday am; but this week has been crazy. This whole week for me will be about the freezer clean out again. I really need to clean out more stuff before buy new stuff; so that is MY goal. C - enjoy The World Tour; I wish I could, just no time in the schedule. Some great looking dishes! With unknown work schedule, I have to keep dinner very simple this week.

    Tacos (w/freezer meat and tortilla stash); salsa, sour cream, cheese,etc; fruit or maybe some black beans spiced up

    NO soup this week / Bread Day: White ABM
    Dinner: Grilled Tilapia (just lemon seasoning); tomato, spinach, mozzarella salad; grilled potatoes
    ----------
    MON ...
    Lady #1 and #2: Fish pouches using tilapia, baby shrimp and bay scallops; white rice with scallions and roasted lemon; sauteed zucchini
    Me: Shrimp salad served in lettuce cups; fresh fruit; homemade bread
    ----------
    TUES ...
    A variation of my spinach and potato casserole; Greek grilled chicken
    ----------
    WED ...
    Lady #1: Grilled pork tenderloin; roasted potatoes and vegetables
    Lady #2: Spinach and potato casserole; Greek roasted chicken; tomato salad
    Me: Leftovers
    ----------
    THURS ...
    Lady #3: Roast lemon Greek chicken; cauliflower mash with gruyere; broccoli; lemon tart
    Me: Grilled salmon; rice pilaf; grilled squash

    FRI ...
    Lady #1 and #2: Card/Game Night TBD
    Me: Out, HH with friends

    Hi,

    We are having a brief break from the ultra hot weather, and I finally got my re-mulching project done. Yesterday I even worked in the drizzle because it was so nice not to be baking at 99+ degrees. I think my clothes were less wet from being out in the rain than they had been on other days from getting sweaty in the heat!!

    Sat – in-law’s anniversary dinner -- we paid a caterer friend to do the cooking (shrimp cocktail, then beef tenderloin, potato gratin, brussels sprouts, and roasted asparagus, then a summer berry bread pudding with whipped cream) and I just had to pick it up and then manage the final prep, serving, and cleanup. The food was excellent and everyone had fun.

    Sun – Beth's Pizza Crust toppings TBD (roasted garlic/spinach/ricotta?)

    Mon – salmon melts (canned salmon) and veg

    Tue – Chicken with Black Beans and Rice (will double and freeze half) with brown rice which I have leftover in the freezer

    Wed – Jamaican-Style Beef Stew w/pitas or something similar

    Thu – Moroccan Spaghetti (Very Low Fat and Healthy)

    Fri – Not sure yet; guests coming for the weekend, so it will depend on their timing, weather, activities, etc. Possibly Chicken in Wine with noodles or bread

    While it seems to be heating up in some parts of the world, please think of us in the Land Down Under FREEZING lol

    What's hiding under the Cottage Pie waiting to be baked?

    VERY healthy indeed!



    PS tried to get a side shot with the ingredient through the glass...didn't look very nice, so will hope to obtain one when I serve it icon_smile.gif
