    Freezing peaches

    I want to freeze some beautiful Georgia peaches, but do not want to freeze them in syrup or sugar. I have some fruit fresh, so is there a way to coat them with that, to avoid using sugar? I am going to contact the fruit fresh people, too,but I thought I might get an answer from all of you! icon_smile.gif

    I have no idea-I would think thawed peaches that have been frozen will be really mushy though.

    I peel and slice my peaches, treat with fruit fresh mixed with water. Drain freeze on a cookie sheet then transfer to freezer bags or containers. I can't rememder the proportions but the were printed under the label.

    I talked to the people at Ball, makers of fruit fresh, and their advice was 2/3 c.sugar and 2 tsp. fruit fresh per quart of sliced peaches (any soft fruit ). The sugar is necessary because it is acts preservative. Gently toss the fruit, and let sit for ten minutes.Bag or freezer box it up, leaving 1/2" headspace and freeze. Easy! I put it in freezer bags. Just thought you'd want to know!

    I have a recipe I use to freeze peaches and they come out like they just came off the tree.
    Firm and not mushy at all.
    I always get complimented on them.
    This year I am freezing 3 lugs and hope that will be enough to get through
    winter.

    When you use your peaches, if you don't want the juice it makes,
    Just rinse it off under cold water.

    You still may have some sweetness to them but you won't have the juice. icon_wink.gif
