    Tomato Juice - Canning icon_question.gif I am canning homemade spaghetti sauce today and I drained off about 5 qts of juice to speed up the cooking down time. What can I do with the left over juice?

    You can use the recipe you mentioned or give V-8 juice for canning a shot.

    Is it tomato juice or tomato water? Lots of uses for tomato water, including:

    As a base for Bloody Marys
    As an added flavoring for beer or vodka
    As a base for gazpacho or cocktail sauce
    As a poaching liquid for shrimp, calamari or lobster
    As a dressing for fresh oysters
    As a marinade for white fish
    As a vinaigrette mix-in
    As a rice seasoner
