    Deli (ready made) pizza dough ?

    Yes, was not in the mood to lug out my bread machine to make pizza dough (It's somewhere in the back of the closet icon_rolleyes.gif ) so I bought some in the refrigerator at the deli.
    I want to use it for dinner, but don't know if I should let it sit out at room temperature or leave it in the fridge till I'm ready to use it. Any advice?

    If the dough has already been formed into a crust and partially baked, I'd leave it in the refrigerator.

    If it's in the form of a ball and will continue to rise, I'd leave it in the refrigerator until about an hour before you want to use it, then remove it and let it have it's final rise. For me, the final rise is in the pan because we like thick crust pizza. If you like thin crust pizza, I'd let it have it's final rise in a bowl, put it in the pan, top it and then bake it immediately.

    Okay.......It is a ball of dough and I did leave it out (it's been about 1/2 hr. and it's still cold.) We do like the thinner crust, so maybe I should just put it back in the fridge. I have about 3 hrs. before I will assemble the pizza.

    If it's been a half hour and it's still cold, I'd leave it out. It takes cold dough longer to rise because it has to warm up. You can leave it in a bowl and let it double in size, then put the bowl in the refrigerator until you're ready to use it.

    Oh, it's been a while since I made dough and I didn't think of that. I haven't put it away yet, so will wait for it to rise.

    As an afterthought, I think the deli makes this dough for their take out pizzas and sells what they don't use. Do you think this will rise again if it was ready to use? (as you can tell, I'm not much of a baker). icon_redface.gif icon_lol.gif

    Unless something has happened that's killed the yeast, it should rise.

    Unfortunately, not knowing how the dough was prepared, how old it is, under what conditions it's been stored, etc., there's really no telling . . .

    I'd just hope for the best and assume it's going to rise as it should. I don't think they'd sell very much of it if it was consistently a dud.

    Thanks again.......I put the dough in an oiled bowl and sat it inside my microwave (our AC is running full tilt here today in Az.). I has almost doubled in size now. I have bought this prepared dough before and always make sure to buy the one with that day's date. I don't think I would want to try it if it was older.

    Guess I'm in good shape now..........you answered my questions very patiently...... icon_lol.gif icon_lol.gif icon_lol.gif
