    Substitute for potato flakes in bread recipe

    I found a recipe for a Hawaiian Bread with all kinds of yummy stuff in it such as pineapple and bananas but it also calls for 1/2 cup of potato flakes of which I have none. I am assuming that these add texture and bulk to the bread...is this right? Think I can sub out oatmeal or ground flax for the potato flakes? This is an ABM recipe.

    if you have 1/2 cup or so of mashed potatoes, you can use that, or just omit it. The potato helps the bread keep longer, but if you don't have it, the bread will be fine - you might need a couple of spoons more of flour.

    Actually, they make the bread lighter and fluffier.

    You could add real mashed potatoes, but you may have to reduce the amount of water a little.
