Tilapia is a nice mild fish - the only thing that I caution is that quite often the fillets are rather thin, so if you are using a recipe that was designed for a thicker-filleted fish, you will want to cut the cooking time.

Here are some recipes that would work well with tilapia:

    Dilapidated Tilapia Packets
    Thai-Style Tilapia With Coconut-Curry Broth
Sauted Fish Fillets With Sliced Garlic and Butter Sauce
    Fish Meuniere With Capers
    Creamy Fish and Mushroom Pie
    Fish and Sour Cream Bake
    Festive Fish Fillets
    Sesame-Crusted Fish

Just dip in beaten egg, then seasoned bread crumbs. I like to add a little lemon zest if you have it and cayenne (pinch) for heat.

Pan saute in olive oil. Also add a lemon slice to the pan, gives good flavor to the fish.

That is my fave way and so easy.

But yes, tilapia is a blank canvas. You can make it anything. But I prefer fish as fish whether than covering it up. The simpler the better for me.

2/1 Baked Tilapia. It is good, not my favorite but tasty.

1 teaspoon mayo, 1/2 teaspoon mustard, 1 tablespoon bread crumbs. Mix all and set to the size

Season fish with s/p. Spread mayo mix on the fish and bake 400 for 10-15 until tender. If you want it brown, under the broiler for 1 minute.

This is super good on any kind of fish. The butter keeps the fish moist.
