Crazy question; I have two different types of yeast, instant and active dry. I found some in the freezer in an an (gasp) unmarked freezer bag. How do I know which type it is?

My recollection is that the instant dry is more finely ground - finer particles - than the active dry. Unfortunately, I don't have any active dry around to compare.

the good thing is - the only affect of using too little yeast is that the dough may take a bit longer to rise. some bread machine manufacturers say you can use them interchangeably in the same quantity, although i normally use 25% less instant.

Yes, I've heard that, too. Instant is smaller. I do have an unopened pound in the freezer, I guess I'll have to break it open to compare! I guess I was hoping there was a test or something. I didn't want to open the sealed one yet.
