I cannot speak for all of Africa, which is a huge continent -- compare it to South America.

But I can speak for my own country, South Africa. We are rapidly developing a wonderful local cuisine. Apart from rustic dishes, I also mean fine-dining dishes.

I saw this post after I wrote to Joy!! Yes, every day dishes is what I am looking for too!!! I also have rice, do they use different varieties??? or is long-grain acceptable...?

Of course long grain would be o.k., no one is that fussy, they would usually use the cheaper varieties. I will put my thinking cap on.
