Newbie "Fry Cook" Poster
I'm listing two of my favorite baking cookbooks. Both of which I bought for under $1 at yard sales:
The first is A World of Breads by Dorlores Casella. First published in 1961. I have the fourth printing in 1971.
Has lots of old-fashioned recipes using politically incorrect ingredients like lard. I usually have lard (about 2 #10 cans worth) on hand since once a year I buy a half a pig from the local pig farmer. Stocks the freezer for the winter.
The second is The 60-Minute Bread Book by Nancy Baggett (great name for a bread baker!) I seem to have a first edition from 1985.
This one taught me how to cut my baking time in half by using the 'cold-oven' method for the second rise. Admittedly, this only works for electric ovens. The idea is that you let the bread do its first rise, punch it down and knead it, then shape it as a free-form round loaf (as I usually do), or baguette or put it immediately in a bread pan. Stick it in a cold oven and then set the baking temperature. Do Not Preheat! You let the oven warm-up assist in the second rise. Bake as normal once oven temperature reaches your pre-set target.
