Say yes to Pineapple!

The pineapple is a native plant of South America. Christopher Columbus is credited with discovering the pineapple on the island of Guadeloupe in 1493, although the fruit had long been grown in South America. He called it Piña de Indes meaning "pine of the Indians." The Pineapple plant was later introduced to Hawaii by Captain James Cook around 1770, however it found it's way into the Caribbean long before that!

The pineapple has wonderful tenderizing enzymes and goes especially well with pork, poultry, seafood, and it would not be a "sweet-and-sour" dish without this versital fruit.
Salsa, fritters, cocktails, breads, grilled.......with meat or without, pineapple really is one of the rock stars of the fruit family.
