Honey is a 100% pure and natural sweetener produced by honey bees. We know that the practice of beekeeping to produce honey dates back to around 700 BC. Bonus points-it never goes bad. The pineapple is a native plant of South America. Christopher Columbus is credited with discovering the pineapple on the island of Guadeloupe in 1493, although the fruit had long been grown in South America. He called it Piña de Indes meaning "pine of the Indians." The Pineapple plant was later introduced to Hawaii by Captain James Cook around 1770, however it found it's way into the Caribbean long before that! Flip over this fruit this month in the Caribbean Forum.

Traditional Ceviche is made with sea bass or flounder, however just about any fish or shellfish will work. Because Ceviche has become very trendy outside of South America, chefs and home cooks alike have chosen to experiment with non-traditional ingredients such as passion fruit, coconut milk, shark, avocado, celery, and mango, just to name a few.
