Either on its own or just as one component of a dish, pork is nothing if not versatile. Delicious roasted pork is associated with special occasions in Venezuela, in Chile, pork is a favorite filling for empanadas, shredded pork tostadas and tacos are served in Central America. Pork is everywhere in Latin American cuisine, and man is it good!

Yum, they all look great - wish I had time to try some but leaving on vacation soon so have to use up left overs.

Recently our grocery store has been offering pork carnitas in its deli. I would like to find a recipe for it so I can make it at home. Do you know of any really good recipes for pork Carnitas?
