Why not just a plain white rice? I wouldn't want a spicey rice dish to overwhelm the mango and delicate fish flavors.

And a cooling Cucumber Raita: Raita

I vote couscous. Far East makes a mango version that is awesome if you just want to try a boxed mix.

I like Kathy228's suggestion, but I'd make it with chicken broth and might add toasted nuts (pecans, almonds, pine nuts, etc..). Whatever nuts you choose, you can toast in a skillet for a few minutes.

I once had barley with toasted almonds and loved it.

Thanks! I am going to make the rice pilaf recipe you sent..sounds fantastic! Should I just do a plain piece of fish with it or do you think the mango salsa halibut would work?
You help is very much appreciated!
