Healthy Lemon Poached Salmon and a Cucumber Lemon Sauce, equally good hot or cold
Sarasota's Salmon, Asparagus & Poached Egg over Watercress, this also the salmon can be hot or cold

Ceviche, http://www.food.com/recipe-finder/all/ceviche, many different recipes, but you can always sub fish for shrimp or crab of lobster etc.

And pretty much any poached fish to me is excellent on a bed a salad greens.

And cold fish that you have pan sauteed (without) breading is wonderful is salad wraps. You can really make them anything you want. You can go Mexican, Mediterranean, south western or more vegetarian based.

And Molly gave you excellent ideas.

Cold salmon or any white fish is great a cold pasta salads too. I have way too many recipes and there are tons on here.

Cold poached salmon with watercress, and tiny sweet toms with mayo in a sandwich - mmmmmmmm!

    Your choice of bread.

Might add cucumber if you like.

If you add a tiny bit of whole grain mustard to the mayo before adding it to the sandwich this gives a nice piquancy.

I've also loved this with nasturtium flowers, nice and peppery!
Now that it's summer this addition is lovely, just don't 'borrow' the nasturtium flowers from your neighbour's garden!

You can also do this mixture in a wrap.
