Brian you may like to look at Golden Potatoes Au Gratin 127381 though I think it would be more Indian than Chinese but awalde's photo really impressed me in the Photo Forum in the comfort foods thread that ran in February.

Hi Brian - good to see you back. Have you found any interesting Chinese recipes using potatoes yet? Hard to find them - I guess most of our Chinese recipes are coming from Southern areas and not the Northern areas? Anyway, I have one if you are interested and have not found one yet.

Wonder Pork and Potatoes
from Martin Yan
Serves 4
Seasoning
1/3 C chicken stock
1 T soy sauce
1 tsp white vinegar
1/2 tsp sugar
1/2 pound ground pork
1 tsp cornstarch
2 T vegetable oil
2 T garlic, minced
2 dried hot chilies, crushed
1 russet potato, peeled and cut in 1/4 x 1/4 x 2 inch strips
1 carrot, peeled and cut into thin strips
2 green onions, cut into 2 inch lengths
Stir the chicken stock, soy sauce, white vinegar, and sugar in a small bowl.
Stir the cornstarch into the pork in a small bowl.
Heat a wok over high heat until hot. Add the oil and swirl to coat the sides. Add the garlic, chilies and cook, stirring until fragrant, about 20 seconds. Add the pork and cook until pork begins to crumble, about 2 minutes.
Add the potato, carrot, green onions, and seasonings. Reduce the heat to medium, cover the wok and simmer until the potatoes are tender, 4 to 5 min.

Hi all. Crystal here. Haven't been browsing as much as I wanted. But that might change now that I saw some interesting forums here. I love cooking and Asian food has a spot in my heart.
