    Waaaay back, mom would take us down to the border several times a year.

    Later, around the late 70's and 80's, when I went, the tiny taco stands down in Mexico always served up their tiny corn tortilla tacos w/ a marinated radish and carrot.

    What is this?

    Probably just a pickled radishes and carrots with some mexican-style spices.

    I think it's called escabeche, Amber. Click on Escabeche (Pickled Vegetables) and see if it will work for you.

    It is called Escabache sounds like (es kah bay chay)

    There are many different kinds of escabeche though. Sort of like 'pickles' could be sweet, sour, dill, kosher etc... Escabeche could have other veggies in it but I usually find carrots and jalapenos in my area of Texas. I think radish is found more in the region California/New Mexico area but I could be mistaken.

    Here you find it in grocery stores even but it is labeled pickled jalapenos with no reference to the onion and carrot in it. I have never seen it in the store with radish in it.
