    Newbie "Fry Cook" Poster
    Hi Im a newbie on here I was looking for a cake recipe from Algeria which isnt too much honey so I was delighted to find this post. Although my french is pretty dire so I dunno how to create them as the recipe has no instructions in English version of the recipe. Sorry to be cheeky but they are for a speech Im giving on Algeria to a group of women and I am making variety of little cakes /pastries so I dont want to wing it and waste £££ on almonds as they are expensive.     Hi Jools100,

    Here are instructions in English-

    To make the pastry-
    Using your hands mix the flour, butter, egg and salt together. Gradually add the orange flower water until the pastry is the right texture (ie, it holds together but is not wet). Leave the pastry to rest in the fridge for at least one hour.

    To make the filling-
    (The original recipe uses peanuts but almonds or other nuts can be used, in any case they should be ground or very finely chopped.) Mix the ground nuts, sugar, lemon zest and eggs together.

    Once the pastry is ready to use roll it out into a big rectangle shape that is approx 2-3mm thick.

    Spread the mixture onto half of the rectangle, don't be too generous with it as it can ooze out a bit during baking. Cover this with the other half of the rectangle.

    Cut into lengths (I'd say approximately 2cm wide x 14cm long )

    Holding each end of the cake twist twice.

    Place on a prepared baking tray, leaving a gap between each one.

    Bake in the oven at 160 Celsius / gas mark 3 until golden brown.

    To make the syrup-

    gently heat the the honey and orange flower water together.

    Dip the cakes into the syrup and leave on a wire rack so that any excess can drip off.

    My favorite Algerian cake is Makrout el louz, They are not dipped or drenched in honey at all, maybe they could be worth a go for your event?
