I do like mine, I don't many casserole or that it is. However, Making stock, chicken and dumplings, I make a Thai Chicken Rice bowl I love. Beef tips in a red wine beef mushrooms sauce over noodles (you can leave the wine out), I make a chicken stew with mushrooms, asparagus and lemon, chili is great and some soups. I like the layered flavor of soups, but there are many that are very good.
Ham, pulled pork. I stuff flank steak and pork tenderloins (I do pan sear first to brown and then add, but 8 hours later dinner.
My friends favorites. My pork tenderloin stuffed with caramelized onions, gorgonzola cheese, pecans, figs, apricots and cranberries. Then slow cooked with fresh pears in a chicken white wine broth and then drizzled over the top of mashed potatoes and leeks. 15 minutes to stuff, 15 minutes to make the potatoes and leeks in the microwave a nice salad and crunchy bread. I won first price for this at a local contest.
I make another with apples and pears, and pork tenderloin (not stuffed), brushed with garlic and maple syrup. The broth is chicken broth, apple cider, white wine if you want, surrounded with sweet and white potatoes and pearl onions and cremini mushrooms and just baked. Just slice and serve. Make a quick vegetable and presto.
QUICK NOTE: When cooking in a crock pot, the last 30-40 minutes, wrap you beans or asparagus or peas in a foil pouch and set in the crock pot. They will be done and no pots. If you have rolls, you can heat up as well. They won't brown, but will heat up. Especially fresh slices of bread. You can wrap in parchment paper too which I prefer, but either works
