    Cooking with Almond Flour

    That kind of says it all I think. I have all this almond flour and am looking for recipes. I know of elanaspantry.com and have her book but need some variety and some similar recipes with different things having been tried.

    My whole family is gone gf and low carb so I am anxiously waiting to hear from everyone.

    I had to google savory almond flour recipes and then came across this one:grain free savory country biscuits and this one too: onion cheddar biscuits
    I like to use almond flour for "breading" baked chicken, but you have to pay attention to temperatures and either cover with foil or bake at a lower temp for longer.

    Hi Maeven6! There are lots of low carb recipes, including some with almond flour, at Linda's Low Carb Menus & Recipes (www.genaw.com/lowcarb). Linda's also has a section with links to other low carb sites--and some of them probably have recipes that include almond flour too.

    I have Elana's cookbook and have made her bread my husband loves it! Basically it is the flax bread from here, but using 1/2 flax and 1/2 blanched almond flour with the eggs,

    These biscuits just don't 'look' like American southern biscuits, more like British. I may try them but I have all these great cracker recipes for that. I can do a GF biscuit that is like heaven and cornbread but they are all super carb, rice or cornmeal. I was thinking to again split the flours in 1/2 using the Almond flour. Opinions on that anyone?

    Now the onion cheddar look very good I may give them a try.

    I make a flaxseed bread in the microwave - I think it is Linda recipe. but then I slice it into about 12 and bake in again in the oven on a very low temperature till the crackers are crisp - takes about 5 hours. A bit like making biscotti. top one of these with cream cheese and smoked salmon and you can be in low carb heaven!

    These are recipes that use almond flour - i did not refine for gluten-free as not everyone marks such categories, but it's not a huge amount and perhaps you will find something of interest to you

    Thanks for contributing, duonyte. I've been in absentia with a new job and neglecting this forum!
    Meanwhile, here's a recipe of mine that could be made with almond meal rather than almond slices--just be sure to crust the chicken fairly heavily and watch the temp-you might need to use foil to cover to prevent burning.delmonico chicken

    The "cornbread" looks fantastic, as do the pie crust and chocolate chip cookies!

    Anyone have ideas for filling the pie crust? DH won't eat a lot of fruit. Usually I make cheesecake or pudding type desserts but would love to try something new.

    You might be able to fill it with this--although it is designed to stand alone without a crust.Layered Spinach and Ricotta Cheese Bake I looked at the base recipe, and you could make it a neutral or more savory crust without the sweet spices I think.
