    Eggplant

    I wanted to roast an eggplant and couldn't find any slowcooker recipes. I should probably put this up in the 'OMG!' section too. I put it in my 1.5 quart and put it on high and went out. It cooked for 3 hours I think, maybe a bit more. When I opened it it was kinda collapsed and dark brown insides! I think I did it too high too long. So what would you suggest?

    I don't know why the eggplant darkened. Here are some recipes:
