    1 pound rhubarb = How many cups?

    I'm not used to cooking / baking with rhubarb. The Rhubarb Pudding calls for 1 lb. of rhubarb. How many cups should I use? 13x9 pan; 1 c. sugar, 1c. sour cream, 1 tsp. baking soda, 2 eggs, 3/4 c. flour.

    4 cups raw rhubarb cut in chunks is about 1 lb, according to what I could find

    That sounds about right. Most recipes call for cutting rhubarb into 1" slices, but my Japanese relatives don`t like the chunks so I cut about a half inch. Anyway that means I get more slightly peices to the cup and I get 140 grams to the cup. (One pound is roughly 450 grams) so 4-4.25 cups.
