so, if I get this....the protein in full milk would offset the carbs in whole wheat dough...then would just have to add a bit more cheese or different kind ie parm, ricotta etc to increase the protein so it will be more than carbs (as the recipe is posted)

If you make a homemade dough, you would be able to make a thinner crust, using less dough overall per serving. I can't think of anything other than not eating the crust or using a pita pocket to stuff the filling inside instead. The pita may or may not be fewer carbs than the pizza dough, not sure really.

A mini pita pocket stuffed would most likely be lower in carbs, or even using half of a lavash bread should be useful.

What about making a thin pancake to use instead of the dough?
1egg beaten, then add 1 tbsp cream cheese and enough ground almonds to make a thick batter. heat up a frying pan with some butter and then make pancakes to the thickness desired.
Sometimes I add vanilla, or cinammon. Makes a change for breakfast too.
Or you could make a plain beaten egg omelette type to use instead. 1 egg can make 3 very fine omelettes.

I do use wholemeal tortillas on occasion as they have heaps of carbs too
if used a tortilla then it would be a toasted sandwich, not necessarily a calzone
perhaps finding a whole meal one that is not high in sugar or salt then making mini ones and stuffing them
still not 100 percent sold on that idea either...
might have to get the concept of actually eating a calzone out of my head re low carbs

Gday Is a great ides HOWEVER experience has taught me NOT to go for a thinner crust re calzone as you will then have everything fall out all over the place, from the top and from the bottom!!! Needs a doughy existence unfortunately for me...

This post made me laugh, not at you, but at the idea of low carbing and wanting the normalcy of eating breads. Do you have carbquick there? Can you get it? If not, when I was low carbing I bought a mix, very similar to bisquick. You could make pancakes, breads, etc... from it. It was very good. http://www6.netrition.com/low_carb_products_page.html
Don't know if you can order from here, but it certainly helps. Just an idea

you can try soy flour (but that might not be on your list of ok foods). Other flour type subs would be flax which would give a heartier type crust. Coconut requires a lot of egg so that's out. You could also try a mix of hi/lo flours. Could even include some whole oats. Many low carbers subtract the fiber count and use net carb which helps reduce carb counts if you use whole grains.
You could also go the all veggie approach and use peeled sliced really thin egg plant for a rollup type recipe.

for me it is not necessarily about low carb but the sugar content of the entire calzone
It was a FANTASTIC tasting recipe...
next time, might just use 1/2 wholewheat toasted pita and fill it with salad and veggies too

Yes but all carbs convert to sugar so it's not necessarily justs sugar that acts like sugar in the body. (unless you are actually allergic to sugarcane or beet sugar). I'm guessing you are just trying to reduce your carbs rather like sugar busters rather than low carb?
