Hi everyone,
I'm cooking in the next days for a crowd... no problem there, and there will ba lot of vegetarians, also no problem, I have a heap of recipes since half of the in-laws don't eat meat.
However, there will be several vegans there too, and I'd like to serves something wonderful for dessert but I don't have vegan dessert recipes.
I only have a day, so can't start trying all of the zaar vegan dessert recipes,
so... Might anyone be able to please suggest a fabulous vegan dessert that would go with BBQ and a wide range of salads? (not just lettuce tomato etc, I'm including avocado, baby asparagus, raspberries, etc too)
Any quick advice would be most welcome!
Thanks!

This depends on whether or not you have the right ingredients, but is super simple. Saute some pears or peaches(halves or slices) in a light oil, or grill them, and make an on-the-run chocolate sauce with vegan butter, cocoa powder and a little sugar, adding a little fruit preserves to the last minute of the sauce, then stripe the warm fruit with it. To make the sauce, I melt the sugar and vegan butter sub together in the pan and add the cocoa powder to it, stirring constantly until the sauce begins to thicken, then stir in the preserves. I drizzle with a fork over the warm fruit slices or halves and add a dusting of confectioner's if I am going all out. If you have a crowd you can hold the fruit in the warm oven on a platter until you're ready to serve.I hope that helps!

Earth Balance is a brand I use, but i am not sure if it's available where you are. I would consider use of coconut butter as another option. It will be a softer butter sub, which means that you might even use actual bakers' chocolate rather than cocoa powder. You can always experiment with that part first to put over ice cream.
You might also look to see if there are any vegan brownie mixes available to you, as Pamela's makes one that you can just use oil and water to put together, and people LOVE it.

Darn, no Pams here... pity too 'cos they have some excellent products.
I did also look at some vegan brownie/cake type recipes and was surprised to see chocolate chips in some of them, surely choc chips aren't vegan 'cos they are made with milk?
I'm going to look for as many vegan products as possible when I'm at the supermarket and see what suits best.
Thanks!!!!!

Actually, not all chocolate chips are made with milk, no. Dark chocolate chips in particular might be made with soy lecithin or other binding agents for the cocoa powder. That's what's great about the Pamela's.
