    Need recipe for German Black Bread

    Mom used to make this when we were younger and it was delicious. I don't think she used rye flour. It tasted kinda sweet. Wish I would've paid more attention back then. icon_cry.gif
    Anybody got a great German black bread recipe?

    Here is one that should fit the bill! icon_biggrin.gif
    Back Bread! Adapted from a German Recipe. It makes a wonderful dense bread with just a hint of sweetnes.
    2 tsp. dry yeast
    1 c + 2 T warm water
    1-3/4 c rye flour
    2 c bread flour (white)
    1 T cocoa powder
    1 T instant coffee
    1 T dk. brown sugar
    1 tsp. salt
    2 T melted butter
    Egg wash for top. 1 T water 1 egg white

    Combine yeast and warm water. Stir and let sit for 10 minutes until frothy. Sift dry ingredients into a large bowl and make a well in the center. Add yeast and melted butter. In mixer with dough hook or by hand knead for 7-10 minutes. Cover with sprayed plastic wrap. Set asside until double. (1-1-1/2 hours)
    Punch down and devide in half. Form into 2 balls and place in greased 1 lb. loaf pans. Slash tops with a sharp knife. Cover again and leave for about another hour. Until double.
    Use egg wash to brush tops of dough.
    Bake @ 425F for 5 minutes. Reduce heat to 375F and bake 20-25 minutes. wave.gif
