This is with 'Quark" and there realy is no substitute for it unless you live in an area with a large German influence like Milwaukee. There are some recipes here on Zaar to make it , but they will NOT give the desired product.

This one works:
For 1/2 lb quark.
1 quart whole milk
1/4 cup all natural buttermilk
Mix milk and buttermilk in a bowl, cover and let stand at 20 degrees Celsius for 2 days.
After two days heat oven to 30 degrees Celsius and place bowl with milk mixture in it, let sit for 30 minutes.
The curds will have seperated from the whey by then.
Over another bowl place a sieve lined with cheesecloth.
Fill the seperated curds into the cheesecloth, bind it together and hang it up in a cool place over a bowl so that the whey can drip out.
After about 2 hours the curd can be scraped from the cheesecloth.
Can be stored in the fridge for 5-7 days.
