    Freezing Lasagna

    Hi - My recipe for lasagna actually makes 2 recipes - I thought about freezing one of the recipes. Should it be cooked before freezing? Thanks in advance for any advice provided. icon_biggrin.gif

    I've done it both ways and they are both "do-able." I prefer to freeze it UNBAKED, though, since it tastes as good as freshly made.

    I belong to a OAMC/Freezer list, and seems like there the rule of thumb is when making lasagna, you might as well make two batches. One you will serve, and one to freeze....that way you only have to pull it out of the freezer and you have fresh lasagna without any of the prep work. Only thing is....you will need two deep-dish lasagna pans....which I know not everyone has on hand.

    Lasagna takes a lot of prep work (depending on what you put into yours), and when making it, it's just as easy to double up on the batch of sauce with meat, shred all the cheese you'll need, and boil off (slightly al dente) a double batch of noodles.

    There are the no-cook type of lasagna noodles out there, but I have no experience with them.

    The only thing I've heard mentioned on this OAMC/Freezer list, is when going to cook the frozen lasagna, to add a little water to the dish, to compensate for the mositure to keep the noodles moist when heating it up. Afterall, it's already cooked. You just need to warm it through. Some take it right from the freezer to the oven, but I prefer to bring it up to close to room temp (take the freeze off it, still wrapped) then unwrap and warm up in the oven.

    I freeze mine uncooked as the meat sauce used is already cooked - Just make sure its totally defrosted then just cook as normal!

    Me too, and I do the same with Potato Bakes, so easy to just make two, and so nice to have one sitting ready in the freezer icon_biggrin.gif

    Hi! When you freeze lasagna uncooked, you do not even need to cook the noodles first. The action of freezing and thawing apparently does the same thing to the noodles that cooking does. When you finally thaw and cook the casserole, the noodles will turn out as if they had been boiled ahead of time. Saves time and mess! I learned that a long time ago from a book about making your freezer help with your cooking.

    I routinely freeze my second lasagna, unbaked.

    I do boil the noodles just because I'm already boiling some for the pan we'll eat that night. (Might as well boil the whole box at once.) When I boil them first I do not add extra water to the pan that will be frozen. After using that tip years ago I ended up with soupy lasagna when thawed.

    If I make the lasagna a day ahead & plan to just refrigerate it 24 hours before baking, then I won't boil the pasta because the noodles soften up on their own during refrigeration.

    I prefer the taste when the lasagna has been thawing in the fridge overnight, but I have baked it fresh from the freezer as well as with just a few hours on the counter to thaw & both of those options are fine, just adjust bake times to make sure it's hot in the center.
    I have never used deep dish pans but they would require longer baking when frozen & probably a complete thaw first would yield the best taste.

    i use the no boil lasagna sheets - i agree, the freezing etc softens them and its great - i also like to have it sitting in the fridge for at least a day - I think the flavors tend to merge as well.

    its such a nice easy meal to pop in the oven on the day -leaving time to do other things!

    Thank you all so much for all the wonderful advice and tips. I would have never thought about the noodles softening during the freezing and thawing process. I will definately try freezing with out cooking ahead of time. Thanks again!!! icon_biggrin.gif
