Over in the OAMC forum, Pamela has come up with another great idea. Keep packets of chopped leftover ham in the freezer, ready to pull out as needed. As they are reminding us on TV nowadays, ham is not just for holidays any more. Ham is for any day; and the recipes here are great ways to use ham for everyday meals. Note that Pamela freezes her chopped ham just plain – no additions. However the Zaar computer required her to have more than one ingredient in her recipe so she added a pinch of salt and pepper. If you wish to do this, remember to use just a pinch,; ham is a salty meat.
Diced Ham Dinner Starter (oamc) ~ So handy to have on hand! Hormel suggests double wrapping to help keep in moisture. Use within 2 months.

Before we go any farther, let’s think of some of the easy ways to use bits of ham.
* You can add them to scrambled eggs.
*Combine with mayonnaise, horseradish and Dijon mustard for a sandwich filling.
*Use in a chef’s salad or a cobb salad
*Good in stratas or frittatas or quiches.
*Add to packaged au gratin or scalloped potatoes
*Add to mashed yolks for stuffing hard-cooked eggs
*Stir into buttered hot green beans, limas, or peas for Southern flavor
*Add to cream soups
Use ham instead of tuna or chicken in a noodle casserole,
*Grind up odds and ends of ham in food processor with a few pickles. Add mayonnaise as a spread for sandwiches
*Here’s a quick super-gumbo: Use a can of condensed chicken gumbo, a can of water, an 8-ounce can of minced clams and 1 cup chopped cooked ham. Heat and garnish with a sprinkle of parsley.
*For ham-waldorf salad, add 1 cup diced ham to 1 cups diced celery, 1/2 cup broken walnuts, and 2 diced apples. *Mix with 1/2 cups mayonnaise and 2 tablespoons each milk and lemon juice. Makes 4 servings.
*Add diced ham to any kind of canned dried beans – especially good with limas or beans with molasses.
*Another salad: mix diced ham, celery and bananas and add mustard mayonnaise to moisten
*Add diced ham to succotash
*Make ham-stuffed tomatoes
*Add to a basic white sauce to make a biscuit or potato topper
*Add to egg salad, macaroni salad or potato salad

Ham is such a basic food for us that I always end up shaking my head at the leftover ham "problem" -- ham isn't a leftover, its an ingredient.
I haven't posted many ham recipes yet, but here's what I've got:
Ham, Potatoes, and Green Beans
Picnic Pasta Salad -- One Dish Meal
Napa Salad (Chinese Cabbage) -- No Ramen Noodles -- Ham optional
