    Ras el Hanout seasoning ...?

    I don't know if Hajar is around, but someone will surely be able to advise me with this:

    I bought a packet of "Ras al Hanout Assaisonnement" at a food shop in Paris recently. It's a brown powdery spice.

    What can I do with this? As far as I can make out from the meagre French-only indications, it is suitable for stews/casseroles (ragoûts) and soups (bouillons), accompanied by couscous or rice, in the style of maghreb cuisine.

    Hope I translated that more or less correctly, but what I want to know is, at what point do you add it to food? What meat is suitable? Do you fry the spice with onions, as one does with curry spices?

    Smells very good; among others contains coriander seeds, cumin, salt, pimento, fenugreek, and some other spices well known as curry spices.

    I just brought a big jar from Algeria with me! We usually add it to stews, lamb, preferably. You do not need to fry it, just add it to the broth during cooking. My mother-in-law uses it for almost everything, I prefer it only for stews and hearty soups.

    Usually 1/2 to one teaspoon is enough! It is quite strong!

    I'm so glad you also mentioned the amount to use -- I might have added far too much!

    It contains the type of spices we use in traditional food, so I'm sure we'll love it. (I haven't opened the packet yet).

    Thanks for the information. Well, I still have my unopened packet of Ras al Hanout or whatever, and one of these days I'll open and sniff it, and decide how to use it.
