I just want to find out why some people rinse their sauerkraut. I find this a disgusting habit that completely takes away the flavor of the sauerkraut. My family is Polish and was angry at a recent family wedding when the sous chef rinsed all the sauerkraut without asking. Please reply. thank you.

Haven't heard of this myself either but it would seem to take away alot of the flavor?????

Here in Holland we don't wash sauerkraut...we like it as it is.. I also think it would take away all the flavour.

It depends on the sauerkraut and where it comes from. If it is very 'sour' I will rinse it briefly, but usually I don't.

I do not like to rinse purchased saurkraut but I do like to add about half a cup of white wine to it.... When I was a kid most of the kraut was homemade and was pretty salty..a light rinse took some of the salt out but didn't seem to diminish the flavor very much...
