    really want North Germann recipe for Pinkelwurst

    I was stationed in Germany long ago and really enjoyed the food in the Bremen Oldenburg area. one of the local delights was Kohl und Pinkel. (Kale and sausage) Pinkel is a sausage made of pork, oat or barly groats, onion, and beef fat. it is lightly smoked and cooked with the kale. I am trying to find a recipe with the correct proportions to make the pinkel sausage it self...not how to cook it. Any Deutcher Wurstmeisters out there?

    Howdy and welcome to 'zaar, Chef. Very nice to meet a new friend. Click on Prettles and see if it isn't close to what you're looking for (especially if you stuff it into casings). If you give it a try, recipe reviews are very much appreciated.
