    for Greek olives that I need for a recipe. Have all the ingredients ready to make this chicken dish except the olives. I was wondering what type of spices I could use to build up my plain canned black olives to meet the standard? I have also posted over in the Greek forum but I think the time difference will keep an answer from me. I need to make this dish as it is one of MarieAlices' recipes and this is the final day for my month long, "Make a Recipe Every Day (M-F), and I don't want to end the month without this recipe. Any suggestions?

    Greek olives are much saltier, so I would beef up a tad on the salt, I've also seen fennel seeds mixed in with the ones at the deli, and hot pepper flakes. A dash of olive oil and a small dash of red wine if you have it and/or vinegar (just a touch) would help to replicate as well

    Do greek olives have pimientos in them? Do you have any jarred pimientos, or roasted red peppers or even sun dried tomatoes? Without knowing what recipe you are making, I'm probably not much help! As I think Chrissy said, salt is definately a factor!!! Have any capers, even?? They are very salty.

    Greek olives are the black either oil cured or wine cured olives... (you're thinking of the green stuffed ones)
