    What are your favorite recipes with beans? I try to avoid meat as much as possible and beans are something I have come to love and that will also fill my husband up. We love black beans (but don't care for recipes that contain corn) and pinto beans would be good too. Thank you for any help!

    Hey Mandy! Here are some that we like:

    Fast and Lowfat Beans and Tomatoes for a Weeknight (though these are cannelini beans)
    Havana Beans
    Gallo Pinto (Costa Rican Rice and Beans)

    Our favorite black bean recipe is Maman's Super Black Bean Casserole. yummy.gif We typically use flour tortillas, but corn tortillas are just as good.

    Black beans are fabulous in chili, and black bean soup is to die for! There are a number of interesting recipes on this site for both. Unfortunately I have never used pinto beans in anything, so there are no recommendations on that front. Hope that helps a little!

    You should have been at our house yesterday. Two friends showed up unexpectedly with Moe's for DH and myself. We are all 4 vegetarians so they just order 4 Art Vandalays to go. What a treat! They are so huge that we had burritos for dinner last night too. icon_wink.gif

    Moe's is a wonderful chain restaurant. It is southwestern food, famous for their huge burritos (the Art Vandalay is the vegetarian one). It is fast food, you go through the line and tell them what you want on it, like subway. But all of their food is fresh, no freezing, no microwaving. The atmoshpere is awesome, they yell, "welcome to Moe's" when you walk in and play classic rock-ish music. It is so good, the website is www.moes.com you should definately try it if you have one near by ladypit! If you have ever been to a Chipoltle I hear it is very similar and there is one called Qdoba that looks similar also.

    I don't think there is one in OKC yet, but Norman's is located on Campus Corner.

    We have a place called "Moe's Place" around the corner from my house but the 1 time I went I found nothing veggie friendly so I was wondering... I may have to go to Norman just to try this out! icon_smile.gif
