    "lunch-break" at 6pm - need ideas!

    Tue Jul 12, 2005 5:32 pm Groupie
Help, I've just started working from 2pm until 10pm with my "lunch" break at around 6pm. I think I'm going to end up eating breakfast at around 9am, "elevenses" at 1pm, lunch at 6pm and supper at around 10.30-11pm. Breakfast and elevenses I can cope with, but I need ideas for my lunch and supper as neither will normally be a full meal.

lunch - I'm thinking pasta/coucous salad-y things with lots of veg or a sandwich and fruit salad. I do have access to a microwave and fridge/freezer at work although I'd prefer not to stink the tea-room out with something smelly icon_smile.gif I do have plenty of time to prepare something before I go to work.

supper - I'll be eating this at home, quite possibly after my parents have gone to bed so anything that requires too much cooking won't be a good idea.

    Any ideas?

you could try a tuna salad, with the veggies chopped in a blender or food processor. Once chopped, add the tuna fish, and three tablespoons of mayo, and do three or four pulses.

For the veggie part of the salad, add 4 green onions,1/4 cup of red or green peppers, 1/4 cup of carrot.
