    Juicing!

    Right now I'm drinking my breakfast juice of kiwi, orange, lemon, carrot, sweet potato, and sprouts. Never thought I'd be drinking a combo like that!

    I recently got a Champion juicer and so far I'm thrilled with it. Made a creamy, smooth raw walnut butter with it and I can't wait to try frozen bananas for an "ice cream" treat.

    Anyone else juice? Maybe some good tips or ideas? And what about the pulp? I don't bake much anymore, so can't use it for muffins or anything.
    I've made a sort of pate/dip by mixing with almond butter and some seasonings but that's all I can think of.

    *Sigh* I wish I had a juicer . . .

    Can you use the pulp in soups or as part of a veggie shepherd's pie?

    Ah yes, soups! I didn't even think of that, I guess cause the weather is so hot and I haven't made any recently.

    Do you have a dehydrator, yogi? I recently checked out The Complete Book of Raw Food from the library and was pretty impressed by the look of the recipes. A lot of the recipes use juicer pulp and make all sorts of neat things that you wouldn't expect could be made raw. icon_smile.gif I wish I still had it because then I could post some recipes for ya'- I don't know, maybe your library has it, or you could get it through interlibrary loan? icon_confused.gif It's a neat book, though. I wish that I could try some of the raw food vegan recipes, but I just don't have the capital to invest in a juicer and a vitamix and a dehydrator and all that when I still like my cooked food too! icon_wink.gif I must say I admire you for taking the path towards going raw- its a really interesting dietary regime, IMO.

    Roosie, I wish I had a dehydrator. I know I can get one at Walmart for $30 or $40? but if I get another kitchen appliance right now dh will probably freak! Especially after he just got me a $200 juicer!!
    And I'm not sure if I have the patience to wait for hours for something to be done. Heck, I can't even wait for a salad to marinate for a few minutes icon_lol.gif

    Thanks for the (un)cook book idea. I'm heading off to check the library catalog right now.

    icon_lol.gif I know what you mean, I have all sorts of appliances on my "want" list, but I have absolutely no room! icon_rolleyes.gif Just leaves me wanting a bigger kitchen... icon_lol.gif If you ever think you might want to buy one, don't discount eBay and thrift stores. So many great appliances end up being donated or sold for super cheap because people buy them with good intentions and then never use them. icon_smile.gif I really want a pasta machine and I keep eyeing the nice $100 machines complete with ravioli attachements on eBay for like $20. Oh, well.

    I wonder if the pulp might work in a salad dressing or condiment? icon_idea.gif

    I posted this reply under the Cooking Q & A forum but I'll post it here also for you since it has a link to a Vegan recipe to use carrot pulp from your juicer.

    I use the carrot pulp from my juicer to make a "salad mix" and eat it with pita, flat bread or on lettuce. I use the same ingredients as for chicken salad but substitute the carrot pulp for the meat. Also, I put the pulp from carrots, celery, beet, and spinach Juicing into brown rice when I cook it. It looks awful while cooking but tastes good and adds fiber to the rice. I throw pulp into stews when I make them - adds a bit of flavor and fiber.

    I freeze the pulp in plastic bags. Flatten them so its easy to break off portions of it as I want to use it. When I'm making a stew I just break off as much pulp as I want and throw it in the stew.

    When I first started juicing I was overwhelmed with pulp and didn't want to toss it. My juicer leaves enough flavor in the pulp to make it worth finding ways to use this in meals. I did a search online for uses and found the Salad mix on a Vegan site as "Vegan Tuna Salad". http://www.fitnessandfreebies.com/veg/tunasalad.html

    It is tasty and different but I prefer to use all the regular ingredients for a chicken salad instead of this recipe.

    There were also muffin and snack mixes on line but I haven't made those.

    Roosie, I know just what you're talking about! I had wanted the pasta machine a while back too. (now that wish has been replaced by about 3 others icon_biggrin.gif )

    Carol, thanks for all the ideas. I will be trying out different salad mixes. That sounds just like what I wanted.

    I could kick myself- I keep making meals and then realizing afterwards that I could have added some pulp. As I get older I seem to forget everything! Ahh, at least I have an excuse icon_lol.gif

    Glad I could give you ideas. I couldn't remember to use my veggie pulp in dishes either at first. Now I put it in a lot of things. Last time I made frozen banana & strawberry popsicles I put some carrot pulp in the blender. The pops are good and I don't taste the pulp but I know it boosted the fiber content.
