I've got a brand new bread machine I was dying to try tonight...At the grocery store got yeast and bread flour...Got home and the recipe calls for "milk powder" which I don't have...It only calls for a teaspoon...Is there a way I can fudge? Any substitutions that would be suitable??? TIA -HP

You can just leave it out if you want. A teaspoon is such a small amount that I wonder why they even included it. Dry milk is very handy to have if you bake a lot of bread.
Congratulations on your new bread machine! What kind did you get? I always use mine to make dough but I prefer to bake my bread in the oven. Be sure to come over to the Breads and Baking Forum to join in all the bread-baking fun.

You could use a few spoonfuls of milk to make up for it, while decreasing the liquid slightly.

Milk produces a softer smoother bread texture and a darker crust than water does. It won't really hurt to leave it out if you don't have any, but it might alter the results slightly.

there are plenty of bread machine recipes that don't use the dry milk powder- here's my bread machine cookbook

Thank you all for your responses...The Sunbeam bread machine I have I just recieved as a bridal shower gift/wedding present. I'm a complete novice when it comes to baking bread. I surprised myself by setting the whole thing myself last night about midnight. Shhhhhh...don't tell anyone but I ran to another recipe sight and found a non-milk bread machine recipe which had hundreds of excellent ratings. I used said recipe and it produced a great loaf of bread. I was so excited! Imagine that...so much excitement over my bread machine...Does anyone know if Sunbeam is a decent bread machine? BTW, I will be visiting the bread making forum for I can't wait to try other recipes! *Hugs* -HP

One of my bread machines is a Sunbeam. It is a very decent machine, though I prefer my Breadman ultimate. We have a big family and sometimes do batch cooking so it is not uncommon for me to be making dough for rolls in the Sunbeam and a loaf of bread or pizza dough in the bread man. I make a loaf of bread almost every night. We are way spoiled and not one of us, including the baby (grin) like storebought bread now!
