Veggie Sandwiches

I'm loosely following the Fit For Life format, the "fruit in the a.m., watch your food combinations" plan...
Anyhoo.... I need new ideas for sandwiches with interesting whole-grain breads, wraps, etc.... and veggie fillings.

My fav veggie sandwich includes:
hummus, alfalfa sprouts, avacado, sliced tomato on whole grain bread.
for a wrap: cream cheese, green onion, tomato & shredded carrots.
I also like to make quick soft tacos. I heat a corn tortilla in a skillet until pliable. Spread a little refried beans (the fat free versions don't have lard) on one half, add some sliced picked jalapeno slices, a smidge of shredded cheddar cheese, fold over and sizzle until the edges get crispy. On the side I usually mix shredded cabbage (the bagged kind - I am busy AND lazy) with a nice chunky salsa. I like hot - hot and cold - cold.

If you are doing the food combining thing, are you avoiding mixing starches with proteins?
btw, I do the fruit in the morning and try to do the proper food combining thing too.

I don't know if you can find a non-rennet Brie or similar but Brie and Grape Sandwiches with Mint recipe #70549 may give you some ideas.

Yes! And it's amazing how much better I feel. You really notice the difference when you "fall off the wagon" (like on holidays  ) and pay for it the next day.

I really like roasted veggie sandwiches. Since you can't have a protein with it, I like to smear either eggplant (roasted and processed) or sun dried tomato (processed till smooth too) on the bread to give a little creamy texture.
Maybe add a little flavor to them when you process with herbs, liquid aminos, whatever.
I'm glad the diet is working for you! I love eating the fruits in the morning too. It's nice and light, doesn't weigh me down, and I know I'm getting my fruit for the day.

My fave are the classic toasted tomato sandwich and a roasted eggplant with a thick layer of hummus. My husband's faves are either fruit chutney and cheese on pita, or avocado and sprouts on a bread/pita that has been spread with nayonaise and liberally sprinkled with basil. I really recommend the basil - it is amazing what an amazing and tasty difference it makes to the sandwich. HTH!

The avacado and sprouts sounds really good foodgirl. I may try that today, maybe with some tomato too.
Are sprouts considered vegetables? Even sunflower or bean or are those still proteins??

I use the liquid aminos, too... love the flavor! I like the idea of using eggplant as a sandwich spread instead of mayo, etc.
On my plan, some "veggies" that are actually fruits can be eaten with other fruits, like tomatoes. As far as beans, they're a "once in a while" thing because they're difficult for some people to digest. And you can combine "types" of carbohydrates, like pasta with bread, but they don't suggest combining lots of proteins at one time, like beans with meat or dairy because one protein takes long enough to digest on its own, much less two. It's a little complicated and I screw up once in a while, but generally speaking I'm poking along at it and I really feel good!

My new one is Spiced Cauliflower
I made it with the oil left out and the yogurt can be left out for non lactos.
I had made a large batch of it for lunch and we were having the leftovers for supper. Husband had just baked some brown spelt bread so I put some on some bread. Very addictive... Four sandwiches later I was told "IF you don't stop there won't be any supper"

One of my favourite veggie sandwiches is based on organic rye bread, but you could use any other bread if you prefer. Topping is simply sliced avocado and cherry tomatoes cut in half (the tiny ones). Sprinkle with lemon juice and little salt, then grind lots of black pepper over it. Very simple, very fresh! Very yum! You could also toast the whole sandwich if you wanted, or just the bread, before you put the toppings on.
