Oh! How strange... Brown Bread here means something inbetween wholewheat and white bread (it doesn't use all of the wheat or something unlike wholemeal) or sometimes just wholemeal bread is called brown bread because of its colour.

Pain De Mie today. I got around to publishing the recipe and I cheated and made it in the kitchenaid. We'll see if the slight change of not letting the dough rise quite so much before baking helps with the amazing strength of the dough pushing bricks off of it

I did manage to get the loaf into the oven and the weight staying on top but some of the dough managed to creep out anyway. I think next time I am just not going to let the dough rise at all after the first one. Just scrape it in and cover and bake.
Edit again: Okay so after I used a knife to scrap off the stuff on the pan and got it out of the pan safely, it looked pretty good. I even got to do the crustless sandwiches thing
