    Malt Extract

    Recently I bought a wonderful baking book published in England. I tried some of the cake recipes and they were wonderful; however, I'd like to try some of the bread recipes also. Some of the bread recipes use malt extract as a flavouring agent and I'd like to know if this is the same stuff that they use to make beer. I've done a search on Google to see if I could find a place in Toronto that sells malt extract and all the hits lead me to sites devoted to beer making. Have any of you ever used malt extract in baking and if I can't get any, what can I substitute for it?

    Try the King Arthur Baking Catalogue (and website). They have several malt products.
