Yay! Love the new categories!
Wanted to share my current favorite cookbook: Beth Hensperger's "The Bread Lover's Bread Machine Cookbook". This has all kinds of good stuff in it.

I haven't seen that one yet. I'll have to look for it. I love bread cookbooks too. If you find some really good ones in it, post the recipes!

I most heartily second TCookie's recommendation for this wonderful bread machine cookbook. I found it on
www.overstock.com for a good price and read all the way through it one page at a time. Every recipe looks promising. I have tried two of them and I can vouch for the excellent recipes in the book so far.

Linda... try the recipe for Pain de Campagne from a Vermont Country Kitchen (on page 250). It has a starter that you make anywhere from 2 to 12 hours ahead in the machine, and then just add the rest of the ingredients and finish up outside the machine after the dough cycle.
It is delicious, and so easy!

If you listen carefully, the crust begins to crackle as it compacts as it cools off.
This crust is amazing, if you really spritz the dough well, and spritz into the oven with your (clean!) water spray bottle. It gets very, very crisp!

Update: The cookbook uses fruit rather than butter and has a section dedicated to salt-free breads.
I am still actively hunting for the perfect low carb, low cal bread recipe......... and the saga continues

Hi, AKillian... The above discussed bread has no sugar in it at all, just yeast, a little rye (or whole wheat) flour, bread flour, water and 1 tablespoon of salt.
