Help! I've been on South Beach for 2 weeks and it really has been a great experience as far as diets go... One of the problems I have had is that a local "low carb food show" I've been watching, has advised the purchase Vanilla without added sugar. I like to make the ricotta snack with a little sugar substitute, vanilla and a pinch of chopped nuts! I do like it, but just noticed that my vanilla has corn syrup added as an ingredient. Another brand said glucose added... icon_rolleyes.gif Anyone know of any brand without the addition of sugar or should I just ignore the advice as the diet is working anyhow!

Look for Pure Vanilla Extract. I got mine in Mexico (the best) but I've also seen it in the stores. The only ingredients in my bottle are vanilla, water, and alcohol. Use just 1/2 the amount called for, as it is very concentrated.

Can you tell me what the brand name of the Vanilla you purchased is? I tried contacting King Arthur Flour and they advised that every Pure Vanilla Extract they sell contains some sugar. The vanilla I have now is "Pure" but contains corn syrup...

If you go to a search engine and type in low carb or sugar free vanilla extract you can find companies that carry it. Or you could make your own with vodka and vanilla beans. Then you would know what you are consuming. There are recipes for homemade vanilla here in recipezaar. icon_wink.gif

You can also order from Penzey's on line. They are easy to find with a google search.
