Vegetarian recipes?

Hi All
Just joined the group and I'm already here with questions!
We went to Vienna the other year and ate the best food I've ever eaten. I understand that German/Austrian cuisine is very meat based but do you know of any vegetarian recipes using typically German/Austrian ingredients? Or any dishes that you'd recommend as being typically of that part of the world which I could substitute the meat/chicken for tvp/quorn?

Actaully, there are plenty of vegetarian German dishes. I am not as familiar with Austrian cooking, but I do know that in Germany there were many health food/organic markets (at least in the area where I lived).
I have some recipes that could work into a vegetarian diet - and I am sure I have some in my German cookbooks that I can share. I'll try to find some good ones for you and post them.

Here are some:

Pfaffenglueck ("Parson's Luck") German Cold Pizza recipe #62336 - the toppings can vary. Leave out the bacon garnish and replace it with something else that has a bit of crunch & salty flavor (nuts or sunflower seeds for example).

Zwiebelsuppe (Clear German Onion Soup ) recipe #61748 (this calls for chicken broth, not the usual beef - but veggie broth would be just fine in this as well)

Hi Heather, these are some good suggestions for german style vegetarian dishes, except for German Style Green Kale (Gruenkohl) #50691 . I think, as you stated yourself, that the bacon in it can not be successfully substituted. The smokiness and saltiness counterbalance the bitterness of the kale so ideally that without it it would be completely different and probably too bitter?
I saved your recipe for Kartoffelkuchen to my cookbook. It sounds delicious
