I read Mean Chefs class (mentioned above in RéeLani's post), he is very thorough and it is an informative class, hats off to Mean. You can also look into batter breads, they are usually easy to make and there is no kneading required. Batter breads are usually not quite as light and fluffy however. If you would like to try something different than regular white bread I have only 2 recipes posted here on Zaar and one is a batter bread and very easy to make, the other is a bubble loaf which requires kneading and shaping. Both do use a Bundt or tube pan.
